Domaine Patrick Piuze

Patrick was born in Quebec and has travelled the world making wine. In the summer of 2000 Patrick backpacked around Burgundy, and serendipitously joined the team at Oliver Leflaive for the harvest. He was then entrusted with their Chablis winery, before further refining his skills at La Maison Verget and taking the cellar master role at Chablis’ Jean-Marc Brocard. Patrick took a leap of faith in 2008 and founded his own winery, he doesn’t own vineyards but has established partnerships with growers that enabled him to pick the best lots in Chablis. Patrick picks relatively early, and presses firmly to capture extract using a mechanical press. He favours old oak barrels and stainless steel, and bottles early to capture maximum freshness and energy.
