Sherry

Jerez is a town and region in Andalucia where sherry is produced. It is dry and very hot in summer, albeit slightly alleviated by breezes from the Atlantic. It is quite flat with white chalk soils that have a strong influence on the flavour of the wine. 95% of the vineyard is planted to Palomino which is at the heart of nearly all great sherry, whatever the style.
